Today is National Carrot Cake Day! I love carrot cake because it is cake and you get credit for vegetables too. Win-win! This is definitely one of my very favorite days. It is pretty much like my birthday only better because I get to eat carrot cake without getting older.
Carrot cake is similar in texture to a quick bread. Carrot cake is made by mixing the dry and wet ingredients in separate containers. The product is a much denser cake. Carrot cake also has other yummy ingredients such as raisins, nuts and cinnamon. Carrots were originally used in the middle ages as a sugar substitute. They replaced the sweetness when sugar was too expensive or difficult to find. The exact origin of carrot cake is unknown.
My favorite carrot cake is sold at Whole Foods. So I will be popping over there to grab one and celebrate this wonderful day! As soon as our snow goes away that is… In the meantime here is a recipe I found. I hope it is as tasty as the one at Whole Foods!
